Chicken Salad with Cranberries, Apples and Walnuts
2 cup cubed rotisserie chicken
1/2 cup mayonnaise
2 tablespoons sour cream
1 teaspoon Dijon mustard
1/3 cup diced celery
1/4 cup diced shallot
1/2 cup dried cranberries
1/2 cup chopped apples
1/4 cup toasted chopped walnuts
1/4 cup flat leaf parsley, chopped
1/4 teaspoon kosher salt
1/2 teaspoon freshly-ground black pepper
In a large bowl,combine all the ingredients. Chill in the refrigerator for an hour.
